Twin Oaks “More Than Tofu”
is Twin Oaks Extra Firm Plain Tofu that has been made with quinoa and amaranth, suffused throughout with organic herbs and seasonings, and marinated in Tamari for seven delicious flavors. All organic and gluten-free!

  • Peanut and Ginger Tofu: A sweet and spicy taste perfect for Pad Thai and rice dishes. Roasted Peanuts, Ginger, and Garlic.
  • Indian Masala Tofu: Satisfyingly complex East Indian flavors. Tumeric, Onion, Coriander, Cumin, Celery Seed, Anise, and Cinnamon.

Twin Oaks Community Foods has been making More Than Tofu  since 2005 for Sunergia. Sunergia is a company that was started by a former Twin Oaks Community member, and we worked closely with him to create and refine his delicious ready-to-eat tofu recipes. Now that we’ve purchased the company, we’re excited to add these amazing seasoned and marinated tofu blends to our full product line. They are the perfect foods for a busy, multi-tasking world that still seeks to be healthy and rational in its organic food decisions. Bravo!

Twin Oaks Community Foods products are made at Twin Oaks Community in Virginia by our worker-owned cooperative. Since the community’s beginning in 1967, our way of life has reflected our values of cooperation, sharing, nonviolence, equality, and ecology. The recipe for Spicy Thai Tofu was created by Jon, a former Twin Oaks Community member, and has made by Twin Oaks since 2005 as Sunergia More Than Tofu Spicy Thai Tofu. Now Jon’s gone on to other things, so we bought his Sunergia company and now include “More Than Tofu” within the Twin Oaks Community Foods family.

Quick Recipe Idea:
Cut into strips and brown with a tablespoon of oil. Spoon atop rice noodles and mix with Thai chili sauce (Nong’s Prik Nam Pla recipe below). Spicy and delicious!


Nong’s Prik Nam Pla (Thai Chili Sauce)
A few years ago I had the most remarkable neighbor from Thailand. She was a wonderful person and a good cook. She would invite us over all the time for dinner, which was always served with her amazing chili sauce on the side. It’s a common Thai condiment, and we used it on everything and craved more. Eventually, to keep us from coming over for every meal, she gave us the recipe, and we began making addicts of all our friends, who make the sauce regularly to this day. I haven’t met Nong since we moved away, but somewhere in the world I am sure a bunch of chili sauce stalkers are lurking around her.

  • 6 Tbsp Nam Pla  (traditional Thai fish sauce, found in Asian markets locally or online—this ingredient is ESSENTIAL to the taste. Do not accept any substitues. It is also used in many Thai dishes.)
  • 1 Tbsp green onions, finely chopped (whatever you call green onions is fine with me. Green, spring, scallions, whatev)
  • 3 Tbsp fresh lime juice (Kafir lime if you can get them locally)
  • 1 Tbsp fresh cilantro, finely chopped
  • 2 Tbsp fresh green serrano chiles, finely minced
  • 1 tsp fresh garlic, finely minced
    1. Combine all ingredients in a small food processor and chop or chop first and mix well in a small bowl.
    2. Tweak the recipe to your taste. Some folks add a bit of sugar, or more chiles, or more garlic. It’s gotta be fresh, though!
    3. Keep in refrigerator. It gets even better with time.

Quinoa (pronounced keen-wah) and amaranth are heirloom grains that are protein-rich and gluten-free. Next, organic vegetables, herbs and spices—fiery chipotle chile, onion, spinach, oregano, and cumin—are integrated through the curds before pressing. Then the tofu is marinated with organic Tamari soy sauce, making the flavors burst through every bite of your More Than Tofu dish!

Formerly known as Sunergia More Than Tofu Spinach Jalapeno Tofu, the recipe for this popular flavored tofu was created by Jon Kessler, a Twin Oaks Community member who moved away and founded Sunergia. He asked us to make his tofu, and we said yes, and so More Than Tofu has made by Twin Oaks since 2005. Jon ran his Sunergia company for many years, and in 2010 sold Twin Oaks the Sunergia brand. Now we make and sell these delicious tofu varieties within the Twin Oaks Tofu family.

Quick Recipe Idea: Cube and brown in a skillet. Fold into a warmed flour tortilla with freshly chopped cilantro, rice, black beans and salsa picante. Top with more salsa and a dollop of fresh plain yogurt (in place of sour cream). Squeeze a fresh lime over it and serve. Muy bueno!
