Twin Oaks Italian Herb Tofu Pepper Pot Soup

This is a hearty vegan variant of pepper pot soup, a stew made of things you have lying around. Great for rainy days!

Ingredients

  • 1 8 oz package Twin Oaks More Than Tofu Italian Herb, cubed
  • 1 cup brown rice, cooked
  • 12 oz vegetable stock, organic
  • 1/2 cup water
  • 1 red pepper. chopped
  • 1 small white onion
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh chives, minced
  • 1 tbsp Sriracha sauce (optional)
  • 1 tbsp red pepper flakes (optional)
  • 2 jalapenos
  • 1 tbsp salt
  • 2 tsp white pepper

Instructions

  1. Pour the water and broth into a pot on the stove; set to medium heat. Add in every ingredient except the rice; combine and stir. Simmer for 15 minutes. Throw in the rice and simmer for another five. It's Vegan, Vegetarian, and Gluten-free.
  2. If you want to tone down the spiciness, omit the jalapenos and Sriracha. Add anything you like... be creative with fresh herbs, or top with crunchy croutons. Deeee-lish!
