Hm, good question! You can cut half-inch thick slices, and cut them down the middle for little veggie steaks. To form it in rounds, crumble it up and mix with a binder. We've used just a bit of water, and our lacto/ovo friends use a bit of egg white. You just need something that works as a binder and allows you to shape it into patties. We’ve asked the “Top Chefs” here at Twin Oaks Community to let us know if they have a good vegan or vegetarian way to create the same effect, and we’ll post it soon. If you have a brainstorm about it, let us know!

Good luck, and thanks for buying our veggie sausage!

your delicious breakfast sausage. Mine were a mess!

Dear Judith,

The veg sausage will last quite some time, especially if you keep it sealed in a bag. I'd say two weeks, but make sure it smells fresh before you use it,
just to be sure.

It's not pre-cooked in the traditional sense, but it is pasteurized. I recommend cooking it because I like the taste better. My favorite recipe is to make rotini with it. Just cook your pasta sauce in a pan, throw in our Vegetarian Chorizo sausage, simmer for 10 minutes, then plate and serve.

Enjoy your soy!

How long will your vegetarian sausage keep in the fridge after it is opened? Is
it already cooked? Does it just have to be warmed up or cooked?

Thanks,
Judith T.

This recipe is so amazingly good and the flavors are very satisfying. I'm lacto-ovo, so that's the variation I prefer, but I'm sure the others are great too. Please post more, Bridget!

Hi Bruce,

We don't sell More Than Tofu to Ellwood Thompson yet, but you could always ask for it, and we can mention your request to them as well. As far as firmness: More Than Tofu is as firm as our regular tofu, but depending on the batch it's sometimes slightly crumblier, because of the added quinoa. But you still won't need to press it before using it, and it's still easy to cube or slice. For storing, I would recommend cooking the entire package of MTT at once and then just storing the leftovers in a container in the fridge. It comes in an 8oz size, so you probably won't have as much left over anyway. Hope this helps! I'll definitely talk to Ellwood's about stocking MTT!

Thanks for your interest and have a great day. -Marie

I would love to try these flavors, but I've never seen them at Elwood Thompson. Are they as firm as your regular tofu? That stuff is the best! Do the Sunergia tofus store the same as regular tofu or are they more like baked tofu?
